Ingredients

  • 1 1/2 c. flour
  • 2 1/4 tsp. baking powder
  • 1/4 tsp. salt
  • 3/4 c. chopped nuts
  • 3 Tbsp. butter
  • 2/3 c. strong coffee
  • 1/4 c. brown sugar
  • 1 egg

Instructions

  1. In a large bowl, combine flour, baking powder and salt.
  2. Add the chopped nuts to the flour mixture.
  3. In a small saucepan, melt butter with the strong coffee and brown sugar.
  4. Cool slightly, then add the coffee mixture to the flour mixture.
  5. Beat well and stir in the egg.
  6. Pour the batter into prepared muffin tins.
  7. Bake at 375°F (190°C) for about 20 minutes or until golden brown.
