Ingredients

  • 1 Tbsp. vegetable oil
  • 1 c. chopped onion
  • 2 c. diced zucchini
  • 1 c. cut green beans
  • 1 medium green bell pepper, seeded and diced
  • 2 c. frozen or fresh whole kernel corn
  • 1 c. canned crushed tomatoes
  • 1/2 c. water
  • 1/2 tsp. oregano leaves
  • dash of salt

Instructions

  1. Heat vegetable oil in a large saucepan.
  2. Add chopped onion and sauté until softened.
  3. Add diced zucchini, green beans, and diced green bell pepper; cook for 5 minutes, stirring often.
  4. Add crushed tomatoes, water, oregano leaves, and salt.
  5. Simmer, stirring occasionally, for 10 minutes.
