Ingredients

  • 1 medium red pepper, julienne strips
  • 1 onion, sliced
  • 2 cloves garlic, chopped
  • 1 Tbsp. olive oil
  • 1 medium tomato, chopped
  • 1 medium zucchini, julienne strips
  • 1 c. mushrooms, sliced
  • 1 Tbsp. vinegar
  • 2 c. cooked spaghetti squash
  • 1/2 tsp. slivered almonds

Instructions

  1. Saute red pepper, onion, and garlic in olive oil for about 3 minutes until tender.
  2. Add chopped tomato, zucchini, mushrooms, and vinegar; cook for another 2-3 minutes, seasoning as desired.
  3. Add cooked spaghetti squash to the pan.
  4. Toss everything well to combine and heat through.
  5. Sprinkle with slivered almonds before serving.
