Ingredients

  • 1 lb. fresh broccoli or 10 oz. frozen broccoli
  • 1/2 c. water
  • 1 1/2 tsp. instant chicken bouillon granules
  • 2 medium carrots, thinly bias sliced
  • 3 Tbsp. butter
  • 1/4 c. sliced green onions
  • 3 Tbsp. flour
  • 1/2 tsp. ground nutmeg
  • 1/4 tsp. white pepper
  • 3 c. milk
  • 2 c. shredded Colby cheese
  • 1 c. shredded Swiss cheese

Instructions

  1. Cut broccoli stalks into small bite-size pieces.
  2. In a large saucepan, combine the water and chicken bouillon granules.
  3. Heat to boiling.
  4. Add carrots and broccoli to the saucepan.
  5. Cover and cook about 10 minutes or until vegetables are tender-crisp.
  6. Drain the vegetables, reserving the liquid.
  7. If necessary, add enough water to the reserved liquid to make 1/2 cup.
  8. Set the vegetables and liquid aside.
