Ingredients

  • 1 can tomato soup
  • 1/3 cup water
  • 1 package Knox gelatine
  • 8 (8 oz.) packages cream cheese, softened
  • 1 cup diced celery
  • 1/2 cup diced onion
  • 1 cup mayonnaise
  • 1 pound cooked shrimp, chopped

Instructions

  1. Bring undiluted tomato soup to a boil.
  2. Dissolve gelatin in 1/3 cup cold water and add to hot soup.
  3. Add softened cream cheese and beat with rotary beaters until smooth.
  4. Let cool for about 5 minutes; then add diced celery, diced onion, mayonnaise, and cooked, chopped shrimp.
  5. Pour mixture into a greased mold.
  6. Refrigerate for at least 24 hours until set.
  7. Unmold and serve with Ritz crackers or on lettuce as a salad.
