Ingredients

  • 2 lb beef loin cut into 8 steaks
  • 4 onions, chopped
  • 1/2 Tbsp mustard
  • 2 tomatoes, peeled and chopped
  • 2 garlic cloves, crushed
  • 2 Tbsp vinegar
  • pinch of oregano
  • pinch of salt
  • pinch of pepper
  • vegetable oil
  • pinch of cumin

Instructions

  1. Season the steaks with mustard, pepper, cumin, and vinegar; let stand.
  2. In a frying pan, heat vegetable oil and sauté the tomatoes, onions, garlic, and oregano; add salt.
  3. In a large frying pan, heat oil and sauté the steaks until browned on both sides.
  4. Add the sauce to the steaks and cook covered for 10 minutes over low heat.

Tips & Substitutions

For a deeper flavor, let the steaks marinate in the mustard, cumin, and vinegar mixture for a few hours or overnight. If you don't have beef loin, flank or skirt steak can be good substitutes. Adjust the amount of oregano based on your preference, as this herb can be quite potent. Ensure the pan is hot before adding the steaks to achieve a nice sear.

Serving Suggestions

Serve Colombian steak with a side of rice and avocado for a traditional touch. It pairs beautifully with Cabbage Rolls(Golabki) or a fresh salad. You can also add fried plantains for a sweet contrast. A cold beer or a glass of red wine complements the flavors nicely, enhancing the meal experience.

Storage & Reheating

Store any leftover Colombian steak in an airtight container in the refrigerator for up to three days. To reheat, place the steaks in a skillet over medium heat, adding a splash of water or broth to keep them juicy. Cover the pan to allow even heating. You can also microwave them, but be cautious not to overheat.

Frequently Asked Questions

Can I use a different cut of beef for this recipe?

Yes, while beef loin is ideal for its tenderness, you can use flank or skirt steak as alternatives. These cuts may require slightly longer cooking times to become tender, so be sure to adjust accordingly.

What should I do if I don't have vinegar?

If you lack vinegar, you can substitute it with lemon juice or lime juice, which will provide a similar acidity. This can enhance the flavor profile of the steak while still keeping it authentic.

Can I make this dish ahead of time?

Absolutely! You can prepare the marinade and let the steaks soak overnight for maximum flavor. Cook the dish as instructed, and reheat gently before serving. This allows the flavors to meld beautifully, making it taste even better.
