  • 1 egg, well beaten
  • 2 Tbsp. strong black coffee
  • 1 Tbsp. rum
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 3 oz. blanched nuts (cashews, almonds or peanuts), chopped

Instructions

  1. Cream the butter and sugar together until smooth and fluffy.
  2. Add 3 tablespoons of flour to the beaten egg, then mix in the strong black coffee and rum.
  3. Combine this mixture with the butter and sugar, beating until a soft batter forms.
  4. Sift the remaining flour with the baking powder (if using) and salt, then gradually add to the batter, mixing well.
  5. Stir in the chopped nuts, adding extra flour if the dough isn't stiff enough to roll out.
  6. Refrigerate the dough for 1 hour.
  7. Flour a surface and roll out the dough to 1/4-inch thickness.
  8. Cut into desired shapes and place on an ungreased baking sheet.
  9. Bake in a preheated oven at 375°F (190°C) for 10 to 15 minutes until cookies are firm and pale beige.

Tips & Substitutions

For a richer flavor, consider using unsalted butter and adding a pinch of cinnamon to the dough. If you don't have caster sugar, you can blend granulated sugar until fine. Feel free to substitute the nuts with chocolate chips or dried fruits for a different twist. Ensure your butter is at room temperature for easier creaming with sugar.

Serving Suggestions

These cookies are delightful on their own or enjoyed with a cup of strong black coffee. They pair beautifully with Chocolate And Raspberry Cake for a dessert spread. You can also serve them alongside a selection of cheeses for an interesting flavor contrast. Consider adding a scoop of vanilla ice cream on the side for a delightful treat.

Storage & Reheating

Store leftover Columbus Cookies in an airtight container at room temperature for up to a week. For longer storage, you can freeze them in a well-sealed bag or container for up to three months. To reheat, place them in a preheated oven at 350°F (175°C) for about 5 minutes to regain crispness.

Frequently Asked Questions

Can I use a different type of flour for this recipe?

Yes, you can use whole wheat flour for a nuttier flavor, but it may alter the texture slightly. If using self-rising flour, omit the baking powder. Just make sure the flour is appropriately measured to maintain the right dough consistency.

What can I do if my dough is too sticky?

If your dough is too sticky to roll out, gradually add more flour, a tablespoon at a time, until it reaches a workable consistency. Make sure to flour your work surface as well to prevent sticking while rolling.

Can I make these cookies vegan?

To make these cookies vegan, substitute the butter with a plant-based alternative, use a flax egg or applesauce instead of the egg, and ensure the sugar is vegan. The cookies may have a slightly different texture, but they will still be delicious.
