Ingredients

  • 4 to 5 bunches fresh spinach
  • 4 hard-boiled eggs, halved
  • 1 cucumber, sliced
  • 2 ripe tomatoes, quartered
  • 4 pitted ripe olives
  • 4 pimento-stuffed Spanish olives
  • 8 strips bacon, fried
  • alfaalfa sprouts
  • small bag radishes
  • salad dressing (French, Italian, Vinaigrette, Blue cheese)
  • 2 bunches fresh spinach
  • 2 tomatoes, cut into wedges
  • 1 bunch green onions
  • 4 strips bacon, fried and crumbled

Instructions

  1. Wash the spinach thoroughly and remove the stalks.
  2. Tear the spinach into small pieces.
  3. In a large bowl, combine the torn spinach, quartered tomatoes, chopped green onions, and sliced green pepper strips.
  4. Cook bacon strips until crispy, then crumble into small pieces.
  5. Add the bacon pieces to the salad.
  6. Pour your choice of salad dressing over the mixture and toss gently to coat evenly.
  7. Optional: Garnish with radishes, olives, alfalfa sprouts, and sliced or whole tomatoes as desired.
  8. Serve immediately.
