- Heat 1 tablespoon of oil in a large skillet over medium heat.
- Add the ground beef and cook until browned, breaking it apart with a spoon.
- While the beef cooks, chop the large onion.
- Add the chopped onion to the skillet and cook until translucent.
- Stir in garlic powder if using, and cook for another minute.
- Drain the can of whole kernel corn and add it to the skillet.
- Add the uncooked rice to the skillet and stir to combine.
- Pour in water (about 3 cups) to cover the ingredients.
- Add salt to taste, approximately 2 teaspoons.
- Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until rice is cooked and liquid is absorbed.
