Ingredients

  • 1 lb. ground beef
  • 1 large onion
  • 1/2 tsp. garlic powder (optional)
  • 1 can whole kernel corn
  • 1 1/2 c. uncooked rice
  • 1 Tbsp. oil
  • water
  • salt to taste

Instructions

  1. Heat 1 tablespoon of oil in a large skillet over medium heat.
  2. Add the ground beef and cook until browned, breaking it apart with a spoon.
  3. While the beef cooks, chop the large onion.
  4. Add the chopped onion to the skillet and cook until translucent.
  5. Stir in garlic powder if using, and cook for another minute.
  6. Drain the can of whole kernel corn and add it to the skillet.
  7. Add the uncooked rice to the skillet and stir to combine.
  8. Pour in water (about 3 cups) to cover the ingredients.
  9. Add salt to taste, approximately 2 teaspoons.
  10. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until rice is cooked and liquid is absorbed.
  11. Serve hot and enjoy.
