A classic beef dish featuring tender sirloin steaks coated in mustard and Worcestershire sauce, pan-fried, then simmered in a flavorful brandy and beef broth reduction. Perfect for special occasions or elegant dinners.

Ingredients

  • 1 1/2 lb. boneless beef steak (sirloin)
  • 2 Tbsp. flour
  • 3 Tbsp. butter
  • 2 Tbsp. Dijon-style mustard
  • 1 tsp. Worcestershire sauce
  • 3 Tbsp. chopped chives
  • 2 Tbsp. brandy
  • 1/2 cup beef broth

Instructions

  1. Cut the steak into 4 serving size pieces.
  2. Pound each steak to 1/4-inch thickness.
  3. Dredge the steaks in flour.
  4. Brown the steaks in 2 tablespoons of butter in a large frying pan for 2 minutes on each side. Remove to a platter and keep warm.
  5. Spread both sides of the steaks with mustard and sprinkle with Worcestershire sauce.
  6. Cook chopped chives in the remaining butter for 1 minute.
  7. Stir in brandy and beef broth.
  8. Cook over high heat, stirring until the mixture is reduced by half.
  9. Return the steaks to the frying pan and heat through for about 1 to 2 minutes.
