Ingredients

  • 6 bacon slices
  • 1/3 cup chopped onion
  • 8 eggs, beaten slightly
  • 1 cup milk
  • 2 tablespoons chopped pimiento
  • 1 tablespoon chopped parsley
  • 1/2 teaspoon salt
  • 1 cup shredded Cheddar cheese
  • 1 cup shredded Swiss cheese
  • 1 tablespoon flour

Instructions

  1. Heat oven to 350°F (175°C).
  2. Fry bacon until crisp; remove from skillet and drain fat, reserving 1 tablespoon.
  3. Crumble the bacon and set aside.
  4. Saute chopped onion in the bacon fat until tender.
  5. Combine beaten eggs, milk, chopped pimiento, chopped parsley, and salt in a bowl.
  6. Toss shredded Cheddar and Swiss cheeses in flour; add to egg mixture and mix well.
  7. Pour the mixture into a 1 1/2-quart casserole.
  8. Bake at 350°F (175°C) for 40 minutes or until set.
  9. Serve immediately.
