Ingredients

  • 1 lb. bulk pork sausage
  • 1 lb. ground round
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 medium onions, chopped
  • 2 firm tomatoes, chopped
  • 12 oz. Mozzarella cheese, grated
  • 6 oz. drained sliced mushrooms
  • 6 large green peppers (square bottoms)

Instructions

  1. Brown sausage and ground round in a large pan with the chopped onions.
  2. Drain the meat mixture and let it cool.
  3. Return the meat mixture to the pan.
  4. Cut the tops out of the green peppers.
  5. Parboil the peppers for 5 minutes.
  6. Drain and cool the peppers.
  7. Add chopped tomatoes to the meat mixture and mix in all but 1/4 cup of grated cheese.
  8. Stuff each green pepper full of the meat and tomato mixture, pressing down firmly.
  9. Top each stuffed pepper with the remaining grated cheese.
  10. Place the stuffed peppers in a glass baking dish.
  11. Add about 1/2 inch of water to the dish.
  12. Bake at 350°F for 15 to 18 minutes until heated through and cheese is melted.
