Ingredients

  • 8 c. potatoes, cooked and diced
  • 6 hard-boiled eggs, diced
  • 2 c. chopped celery
  • 1/2 c. chopped green peppers
  • 1/2 c. chopped onions
  • 2 envelopes unflavored gelatin
  • 2 c. mayonnaise
  • 1 c. sour cream
  • 2 Tbsp. sugar
  • 1 Tbsp. mustard
  • 1 Tbsp. salt
  • 1 c. buttermilk

Instructions

  1. Heat milk and gelatin until the gelatin is dissolved.
  2. In a large bowl, combine cooked and diced potatoes, diced hard-boiled eggs, chopped celery, chopped green peppers, chopped onions, mayonnaise, sour cream, sugar, mustard, and salt.
  3. Add the milk and gelatin mixture to the bowl and mix well.
  4. Spray a 12-cup Bundt pan with cooking spray or Pam.
  5. Press the mixture firmly into the prepared Bundt pan.
  6. Cover and refrigerate until the salad is set, about several hours or overnight.
  7. Unmold the salad onto a serving dish.
  8. Garnish with fresh parsley before slicing and serving.
