Ingredients

  • 12 red sweet peppers
  • 1 cup mayonnaise
  • 1 cup sugar
  • 1 tablespoon flour
  • 1 cup vinegar
  • 2 tablespoons mustard
  • 1 teaspoon salt

Instructions

  1. Remove seeds from the red sweet peppers and grind them well. Drain excess liquid.
  2. Mix mayonnaise, sugar, flour, vinegar, mustard, and salt in a saucepan.
  3. Add the ground peppers to the mixture and stir well.
  4. Cook over medium heat until the mixture thickens.
  5. Seal in hot sterilized jars for storage.
  6. Use as a spread with mayonnaise and cheese for delicious pimento cheese sandwiches.
