Copper Coins are sweet and tangy carrot salad slices marinated in a flavorful mixture, perfect as a refreshing side or appetizer for picnics and family gatherings.

Ingredients

  • 12 to 13 large carrots
  • 1 large green pepper
  • 2 large onions
  • 1 can tomato soup
  • 1/2 cup salad oil
  • 1/2 cup sugar
  • 1/2 teaspoon prepared mustard
  • 1/4 cup vinegar
  • 1/2 teaspoon Worcestershire sauce

Instructions

  1. Cook and slice carrots crosswise into coin-shaped slices.
  2. Mix tomato soup, salad oil, sugar, prepared mustard, vinegar, and Worcestershire sauce in a bowl.
  3. Drain the cooked carrots and combine with diced green pepper and chopped onions.
  4. Pour the marinade over the vegetables and mix well.
  5. Let marinate for at least 24 hours before serving.
