Ingredients

  • 1 cup shelled pistachios
  • 2 1/4 cups flour
  • 1/2 teaspoon salt
  • 4 1/2 teaspoons ground coriander
  • 1/2 pound (2 sticks) room temperature butter
  • 1/4 teaspoon cinnamon
  • 1/2 cup brown sugar
  • 1/2 teaspoon grated orange zest
  • 1 egg
  • 1/4 teaspoon vanilla extract
  • 3/4 cup chopped dates

Instructions

  1. Chop the pistachios; set half aside for rolling.
  2. Finely chop the remaining pistachios.
  3. Combine flour, salt, ground coriander, and cinnamon in a bowl.
  4. Beat butter, brown sugar, and orange zest until creamy.
  5. Beat in the egg and vanilla extract.
  6. Gradually add the flour mixture to the butter mixture, beating until combined.
  7. Stir in chopped dates and coarsely chopped pistachios.
  8. Chill the dough for 30 minutes.
  9. Form the dough into logs about 2 inches in diameter, wrap in plastic, and chill until firm but not hard, about 1 hour.
  10. Roll the logs in finely chopped pistachios.
  11. Cut into 1/4-inch slices and place on a baking sheet.
  12. Bake at 350°F (175°C) for 12 to 15 minutes until edges are golden.
