Ingredients

  • 16 oz. can white Shoepeg corn
  • Large can LeSueur peas
  • 4 oz. jar chopped pimentos
  • 1 c. chopped celery
  • 1 c. chopped green pepper
  • 1/2 c. chopped onion
  • 1 c. sugar
  • 1/2 c. vinegar
  • 1/2 c. vegetable oil
  • salt

Instructions

  1. At least 24 hours before serving, drain the can of white Shoepeg corn, the can of LeSueur peas, and the jar of chopped pimentos.
  2. Combine chopped celery, chopped green pepper, and chopped onion in a bowl.
  3. In a separate bowl, mix sugar, vinegar, vegetable oil, salt, and pepper to create the dressing.
  4. Add the drained corn, peas, and pimentos to the vegetable mixture.
  5. Pour the dressing over the mixture and toss well to combine.
  6. Refrigerate for at least 24 hours before serving to allow flavors to meld.
