Ingredients

  • 4 c. all-purpose flour
  • 1/4 c. sugar
  • 1 Tbsp. baking powder
  • 1 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 2/3 c. shortening
  • 1 c. buttermilk
  • 3 large eggs
  • 11 oz. can vacuum-packed white corn, drained
  • 10 oz. frozen chopped spinach, thawed and squeezed dry

Instructions

  1. Preheat oven to 425°F.
  2. In a large bowl, mix flour, sugar, baking powder, salt, and baking soda.
  3. Cut in shortening with a pastry blender or two knives until mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together buttermilk and eggs.
  5. Stir in drained corn and thawed, squeezed dry spinach into the buttermilk mixture.
  6. Gradually add the wet ingredients to the dry ingredients, stirring just until combined.
  7. Drop spoonfuls of dough onto a greased baking sheet or into a baking dish.
  8. Bake for 15 minutes or until golden brown.
  9. Serve warm.
