Ingredients

  • 1 lb. zucchini
  • 1 Tbsp. butter
  • 1/2 cup chopped onion
  • 2 eggs
  • 1 can corn drained
  • Swiss cheese
  • 1/4 cup bread crumbs
  • 1 Tbsp. butter melted

Instructions

  1. Slice the zucchini and cook, covered, in a small amount of salted water until tender.
  2. Drain and mash the zucchini with a fork.
  3. Cook the chopped onion in butter until soft.
  4. Combine the beaten eggs, mashed zucchini, cooked onion, drained corn, Swiss cheese, and a pinch of salt.
  5. Pour the mixture into a casserole dish.
  6. Mix melted butter, bread crumbs, and Parmesan cheese, then sprinkle on top of the casserole.
  7. Place the casserole on a baking sheet and bake at 300°F until brown and bubbly.
  8. Garnish with cherry tomatoes and parsley before serving.
