Ingredients

  • 1 egg
  • 1 small onion, chopped
  • 1/8 tsp salt
  • pepper to taste
  • 2 cups frozen corn, thawed
  • 3 slices crisp-fried bacon, crumbled
  • 4 slices bread, torn into small pieces
  • 1/4 cup butter

Instructions

  1. Beat the egg in a large bowl.
  2. Add chopped onion, salt, pepper, thawed corn, crumbled bacon, and torn bread pieces; mix well.
  3. Melt butter in a 1-quart baking dish.
  4. Scoop the corn mixture into balls with an ice cream scoop.
  5. Place the balls in the prepared baking dish.
  6. Bake at 325°F for 30 minutes.
