Ingredients

  • 1 1/2 lb. ground beef
  • 1 pkg. chili or taco seasoning mix
  • 1/2 cup water
  • 1 (12 oz.) can whole kernel corn
  • 1/2 cup chopped green peppers
  • 1 (8 oz.) can tomato sauce
  • 1 package corn muffin mix
  • 1 (12 oz.) can French fried onion rings
  • 1/2 cup shredded Cheddar cheese

Instructions

  1. Brown the ground beef in a skillet and drain excess fat.
  2. Stir in the chili or taco seasoning mix, water, corn, green peppers, and tomato sauce. Mix well.
  3. Pour the meat mixture into a 2-quart casserole dish.
  4. In a separate bowl, prepare the corn muffin mix according to package instructions.
  5. Add half of the French fried onion rings to the muffin batter and mix.
  6. Spoon the corn muffin batter around the outer edge of the casserole dish, forming a crust.
  7. Bake in a preheated oven at 400°F (200°C) for 20 minutes.
  8. Remove from the oven, sprinkle shredded Cheddar cheese over the top, and add the remaining onion rings.
  9. Bake for an additional 20 to 30 minutes until the cheese is melted and bubbly.
