Ingredients

  • 2 beaten eggs
  • 2/3 cup milk
  • 1 cup soft bread crumbs
  • 1/4 cup chopped onion
  • 2 pounds ground fully cooked ham
  • 1/2 cup apricot preserves
  • 1 (8 oz.) package corn muffin mix

Instructions

  1. In a bowl, combine beaten eggs and milk.
  2. Stir in soft bread crumbs and chopped onion.
  3. Add ground ham and mix well.
  4. Pat the meat mixture into a 12 x 7 1/2 x 2-inch baking dish.
  5. Bake in a 350°F oven for 30 minutes.
  6. Remove the meat loaf from the oven and drain off any excess fat.
  7. Spread apricot preserves over the top of the ham loaf.
  8. Increase oven temperature to 400°F.
  9. Prepare the corn muffin mix according to package directions.
  10. Pour the corn muffin batter over the preserves-covered ham loaf.
  11. Bake in the 400°F oven for about 20 minutes or until the corn bread layer is done.
