Ingredients

  • 2 eggs
  • 1 large can creamed corn
  • 1 large can whole kernel corn, drained
  • 1 cup sour cream
  • 1/3 cup sugar or less
  • 1/4 cup finely chopped onion
  • 1 cup cornbread mix
  • 1/2 cup melted butter
  • 6 crumbled saltines
  • 1 cup shredded Cheddar cheese
  • salt
  • white pepper

Instructions

  1. Mix all ingredients in a mixing bowl, saving a little butter.
  2. Crumble saltines and sprinkle on top of the mixture.
  3. Sprinkle shredded Cheddar cheese over the top.
  4. Drizzle the remaining melted butter over all.
  5. Sprinkle top with paprika.
  6. Bake for 1 hour at 350°F until set in a 9 x 13-inch casserole dish.
