Ingredients

  • 1 lb. ground beef
  • 1/2 cup onion, chopped
  • 1 (30 oz.) can diced tomatoes
  • 1 (16 oz.) can tomato sauce
  • 1 (25 oz.) taco seasoning mix
  • grated cheese
  • sour cream
  • chopped green onions
  • 3 cups water
  • 1 (16 oz.) can kidney beans
  • 1 (16 oz.) can chili beans or canned chili with beans
  • garlic salt
  • 2 diced avocados
  • corn chips

Instructions

  1. In a large pan, cook ground beef until browned; season with garlic salt.
  2. Add chopped onion and cook until limp or browned.
  3. Add water, undrained beans, diced tomatoes, tomato sauce, and taco seasoning mix.
  4. Simmer, covered, about 15 minutes.
  5. Just before serving, add diced avocado to the soup.
  6. Serve the soup topped with grated cheese, sour cream, and corn chips as desired.
