Ingredients

  • 4 Tbsp. unsalted butter
  • 1/4 c. vegetable oil
  • 7 c. fresh or frozen corn
  • 1 c. very finely chopped onion
  • 1/4 c. sugar
  • 1 tsp. white pepper
  • 1/2 tsp. salt
  • 1/2 tsp. Tabasco sauce
  • 2 1/4 c. chicken, beef or pork stock
  • 4 Tbsp. margarine
  • 1 c. evaporated milk
  • 2 eggs

Instructions

  1. In a large skillet, combine butter and oil with corn, onion, sugar, white pepper, salt, and Tabasco sauce.
  2. Cook over high heat until the corn is tender and starch starts to form a crust on the pan bottom, about 12 to 14 minutes, stirring occasionally and more as mixture starts sticking.
  3. Gradually stir in 1 cup of the stock, scraping the pan bottom to remove crust as you stir.
  4. Continue cooking for 5 minutes, stirring occasionally.
  5. Add the margarine, stir until melted, and cook for 5 minutes, stirring frequently and scraping the pan bottom as needed.
  6. Reduce heat to low and cook for about 10 minutes, stirring occasionally, then about 15 minutes, stirring fairly frequently.
  7. Add the remaining 1 cup of stock and cook for about 10 minutes, stirring occasionally.
  8. Stir in 1/2 cup of evaporated milk and continue cooking until most of the liquid is absorbed, about 5 minutes, stirring occasionally.
  9. Remove from heat.

Tips & Substitutions

For a richer flavor, consider adding diced bell peppers or a pinch of smoked paprika. If fresh corn isn't available, frozen corn works perfectly. Adjust the sweetness by varying the sugar; you can reduce it or substitute honey. To enhance the dish, try adding cooked bacon or sausage for a savory twist.

Serving Suggestions

Serve Corn Mague Choux as a comforting side dish alongside grilled meats or as a vegetarian main with crusty bread. It pairs beautifully with Chicken Paprikash for a hearty meal. Garnish with fresh herbs like chives or parsley for a pop of color and freshness.

Storage & Reheating

Store leftovers in an airtight container in the refrigerator for up to three days. To reheat, warm in a skillet over medium heat, adding a splash of water or additional evaporated milk if needed to prevent sticking. You can also microwave in short intervals, stirring frequently.
