Ingredients

  • 1 cup shredded Cheddar cheese
  • 1 cup Ritz cracker crumbs
  • 1 small jar pimento
  • 3/4 cup milk
  • 1 egg, beaten
  • 1 can creamed corn
  • 1 can yellow corn
  • 1/2 cup chopped onion
  • 1/4 cup chopped bell pepper

Instructions

  1. Saute onion and bell pepper.
  2. Grease a glass baking dish.
  3. Pour all ingredients into the dish, except half of the cracker crumbs and half a cup of cheese.
  4. Mix well, then sprinkle the remaining cracker crumbs and cheese on top.
  5. Bake for 30 minutes.
