Ingredients

  • 3 eggs
  • 1 cup sugar
  • 1 1/2 teaspoons vanilla
  • 3 cups flour
  • 1 teaspoon baking powder
  • 1 cup Mazola Oil
  • 3/4 cup walnuts

Instructions

  1. Beat eggs, sugar, and vanilla until thick and creamy.
  2. In a separate bowl, mix all dry ingredients.
  3. Alternate adding dry ingredients and egg mixture, mixing well after each addition.
  4. Add oil and mix thoroughly.
  5. Fold in walnuts.
  6. Grease and flour a cookie sheet.
  7. Shape the batter into two loaves on the prepared cookie sheet.
  8. Bake at 350°F (175°C) for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  9. Slice diagonally and return the slices to the oven to toast for 5-10 minutes.
