- Beat eggs, sugar, and vanilla until thick and creamy.
- In a separate bowl, mix all dry ingredients.
- Alternate adding dry ingredients and egg mixture, mixing well after each addition.
- Add oil and mix thoroughly.
- Fold in walnuts.
- Grease and flour a cookie sheet.
- Shape the batter into two loaves on the prepared cookie sheet.
- Bake at 350°F (175°C) for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Slice diagonally and return the slices to the oven to toast for 5-10 minutes.
