Ingredients

  • 2 cups freshly scraped corn kernels
  • 1 tablespoon butter
  • 1 cup minced onion
  • 1 garlic clove, minced
  • 1 tablespoon curry powder
  • 3 tablespoons flour
  • 1 large tomato, cut into 1-inch pieces
  • 3 cups chicken broth
  • 1 cup plain yogurt

Instructions

  1. Heat butter in a saucepan and add the minced onion.
  2. Cook until soft and then add the minced garlic.
  3. Add the curry powder and flour; stir well.
  4. Add the chopped tomato and chicken broth; stir to combine.
  5. Let the mixture simmer for 20 minutes.
  6. Pour the soup into a food processor and blend until smooth.
  7. Reheat the blended soup and add the freshly scraped corn kernels.
  8. Bring to a boil, then remove from heat and stir in the plain yogurt.
  9. Garnish with chopped basil leaves or parsley before serving.
