Ingredients

  • 3 large onions, sliced
  • 4 or 5 cans corn, drained
  • 3 Tbsp. butter
  • dash of pepper
  • 3 Tbsp. flour
  • 1 1/2 c. milk
  • 3/4 tsp. salt
  • 1/2 to 1 c. chopped onion
  • 1 small jar pimento, chopped (3 Tbsp.)
  • 1 1/2 c. Velveeta cheese

Instructions

  1. Layer sliced onions and drained corn in a greased 9 x 13-inch casserole dish.
  2. Cover with foil and bake at 400°F for 1 hour.
  3. Saute 1/2 to 1 cup chopped onion until translucent.
  4. Make a white sauce by melting butter, then stirring in flour and milk to form a roux.
  5. Add sauteed onion, chopped pimento, salt, and pepper to the sauce, then stir in Velveeta cheese until melted.
  6. Pour the cheese sauce over the layered corn and onions.
  7. Bake uncovered in the oven for about 10 minutes until bubbly.
