Cornmeal Biscuits
Golden, cheesy cornmeal biscuits with a hint of green chili peppers, perfect for breakfast, brunch, or as a side dish with hearty meals. Crispy edges and tender interior.

- Stir together flour, cornmeal, baking powder, baking soda, and salt.
- Cut in butter until mixture resembles coarse crumbs.
- Stir in shredded Cheddar cheese.
- Make a well in the center of the mixture and set aside.
- Stir together buttermilk and undrained can of diced green chili peppers.
- Add the buttermilk mixture all at once to the dry ingredients and stir just until moistened.
- Turn out the dough onto a floured surface.
- Gently fold and press the dough 10 to 12 times or until it becomes smooth.
- Pat the dough out to a 1/2-inch thickness.
- Cut out biscuits using a floured 2 1/2-inch biscuit cutter, dipping the cutter into flour between cuts.
- Place the biscuits on an ungreased baking sheet.
- Bake at 450°F for 12 to 15 minutes until golden brown.
- Serve hot with butter.
