Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup cornmeal
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter or margarine
  • 1/2 cup shredded Cheddar cheese
  • 1/2 cup buttermilk
  • 1 (4 oz) can diced green chili peppers, undrained

Instructions

  1. Stir together flour, cornmeal, baking powder, baking soda, and salt.
  2. Cut in butter until mixture resembles coarse crumbs.
  3. Stir in shredded Cheddar cheese.
  4. Make a well in the center of the mixture and set aside.
  5. Stir together buttermilk and undrained can of diced green chili peppers.
  6. Add the buttermilk mixture all at once to the dry ingredients and stir just until moistened.
  7. Turn out the dough onto a floured surface.
  8. Gently fold and press the dough 10 to 12 times or until it becomes smooth.
  9. Pat the dough out to a 1/2-inch thickness.
  10. Cut out biscuits using a floured 2 1/2-inch biscuit cutter, dipping the cutter into flour between cuts.
  11. Place the biscuits on an ungreased baking sheet.
  12. Bake at 450°F for 12 to 15 minutes until golden brown.
  13. Serve hot with butter.
