Ingredients

  • 1 lb boneless chicken or pork
  • 1 Tbsp oil
  • 2 cups sliced ripened tomatoes
  • 1 chile pepper
  • 2 Tbsp water
  • 4 cups masa harina
  • 8 Tbsp margarine
  • 1 1/2 cups cold water
  • 1 tsp salt
  • fresh corn husks

Instructions

  1. Cut the meat into 1-inch cubes and fry in oil over medium heat for 3-4 minutes. Set aside.
  2. Process the tomatoes, chile pepper, and 2 tablespoons of water into a smooth sauce. Set aside.
  3. Mix the masa harina, margarine, 1 1/2 cups cold water, and salt together to form a thick mush.
  4. Place 1/2 cup of the mush into each wet corn husk, make an indentation with your finger in the center, and add 1 tablespoon of the sauce into the indentation.
  5. Add one chunk of meat into the center of each filling.
  6. Cover the stuffing with the remaining mush and wrap the dumpling into a sausage shape with the corn husks.
  7. Steam the dumplings over hot water for 1 1/2 hours.
  8. Unwrap and serve.
