Ingredients

  • 1 c. sifted cake flour
  • 3 Tbsp. sugar
  • 1 Tbsp. baking powder
  • 1/2 tsp. salt
  • 2 eggs, separated
  • 3/4 c. cornmeal
  • 1 1/2 c. buttermilk
  • 5 Tbsp. butter, melted and cooled

Instructions

  1. Sift flour, sugar, baking powder, and salt; stir in cornmeal and set aside.
  2. Beat egg yolks until thick and lemon-colored. Beat in buttermilk and melted butter.
  3. Add to dry ingredients and stir just until blended.
  4. Whisk the egg whites until stiff peaks form.
  5. Gently fold the egg whites into the batter.
  6. Preheat waffle iron and lightly grease if necessary.
  7. Pour batter into the waffle iron and cook until golden brown and crisp.
