Ingredients

  • 1 chicken, cooked in salted water
  • 2 medium onions, chopped
  • 1 bell pepper, chopped
  • 3 Tbsp. olive oil
  • 1 tsp. powdered thyme
  • 2 (1 lb.) cans tomatoes, cut up
  • 1/2 c. currants or raisins, soaked in chicken stock
  • 1 small can or pkg. blanched almonds
  • 1 tsp. salt
  • 2 tsp. curry powder
  • 1 tsp. sugar
  • 1/8 tsp. red pepper
  • 1 clove garlic

Instructions

  1. Saute onions, garlic, and bell pepper in olive oil.
  2. Add tomatoes and cook for 5 minutes.
  3. Add the rest of the ingredients (spices and seasonings).
  4. Cook for 10 minutes.
  5. Add chicken.
  6. Transfer to a casserole and bake, uncovered, in a 350° oven for 45 minutes.
  7. Add soaked currants and almonds.
  8. Serve with or over rice.
  9. Can freeze.
