Ingredients

  • 1 cup cracklings
  • 1 1/2 cups cornmeal
  • 4 tablespoons flour
  • 1 teaspoon salt
  • 1 teaspoon soda
  • 1 egg, beaten
  • 1 1/2 cups thick buttermilk
  • 1 tablespoon bacon fat

Instructions

  1. Sift the dry ingredients together and then stir in the cracklings.
  2. Beat the egg in the buttermilk and add to the dry ingredients mixture.
  3. Have melted bacon fat in a hot skillet and pour in the batter.
  4. Bake at 450° until light brown.
