Ingredients

  • 4 to 4 1/2 cups bread flour
  • 2 packages active dry yeast
  • 1 1/2 teaspoons salt
  • 2 tablespoons vegetable oil
  • 1 egg white
  • 1 tablespoon water
  • 1/3 cup light brown sugar
  • 1 tablespoon caraway seed
  • 2 cups very warm water

Instructions

  1. In a large bowl, combine 2 cups of all-purpose or bread flour, sugar, undissolved yeast, caraway seed, and salt.
  2. Gradually add the very warm water and vegetable oil; beat for 2 minutes on medium speed.
  3. Scrape the bowl occasionally during mixing.
  4. Add 1/2 cup of flour; beat for 2 minutes on high, scraping the bowl.
  5. Stir in the rye flour and enough all-purpose flour to make a soft dough.
  6. Knead on a floured surface until smooth and elastic, about 6 to 8 minutes.
  7. Shape the dough into a loaf and place in a greased baking pan.
  8. Let rise in a warm place until doubled in size, about 1 hour.
  9. Brush the top with the beaten egg white mixed with water.
  10. Bake in a preheated oven at 375°F (190°C) for about 30 minutes or until the bread sounds hollow when tapped.
