  • 3 to 4 lb. chicken, cut up

  • 4 oz. cooked fine egg noodles or 3 cups cooked rice

Instructions

  1. In a 4-quart or larger crock-pot, combine the chicken, chopped onion or leek, chopped carrot, chopped celery, parsley, bay leaf, thyme, salt, pepper, and water.
  2. Cover and cook on low for 7 or 8 hours until the chicken is tender.
  3. Remove the chicken and bay leaf from the crock-pot.
  4. Turn the crock-pot on high.
  5. Remove the meat from the chicken parts and cut into bite-sized pieces.
  6. Return the chicken to the crock-pot and add cooked noodles or rice.
  7. Heat and serve at desired temperature.
