Chicken Caesar

Ingredients
- 3/4 cup olive oil ⓘ
- 1/4 cup lemon juice ⓘ
- 1/4 cup finely grated Parmesan cheese ⓘ
- 1 can anchovies, drained and chopped ⓘ
- 1 clove garlic, minced ⓘ
- 2 teaspoons Dijon mustard ⓘ
- 1/2 teaspoon black pepper ⓘ

- 4 boneless, skinless chicken halves ⓘ
- 1/2 pound green beans, drained and cooled
- 6 to 8 small potatoes, cooked and cooled, cut into quarters ⓘ
- 3/4 cup cooked or thawed frozen corn ⓘ
- 1 medium carrot, cut in halves ⓘ
- 2 green peppers, sliced ⓘ
- finely chopped parsley ⓘ

Instructions
- To make Caesar dressing, place olive oil, lemon juice, Parmesan cheese, chopped anchovies, minced garlic, Dijon mustard, and black pepper in a food processor, processing until smooth and creamy.
- Add salt to taste.
- Grill or pan-fry the chicken halves until cooked through and golden brown.
- Prepare the vegetables: drain and cool green beans, cook and cool potatoes, cut into quarters, prepare the corn, carrot, and green peppers.
- Assemble the salad by combining the vegetables and chicken, then toss with the Caesar dressing.
- Garnish with chopped parsley and basil before serving.
