  • 2 Tbsp. butter
  • 6 oz. frozen hash browns
  • 1/4 c. chopped onion
  • 1/4 c. chopped green pepper
  • 6 eggs
  • 1/4 c. milk
  • 1/2 tsp. salt
  • dash of pepper
  • 1 c. shredded Cheddar cheese

Instructions

  1. Cook bacon 4 minutes at High or until done. Remove and set aside.
  2. In an 8-inch cake dish, cook butter, frozen hash browns, chopped onion, and chopped green pepper uncovered for 6 minutes at High until tender.
  3. Mix eggs, milk, salt, and pepper in a bowl.
  4. Flatten the potato mixture in the dish and pour the egg mixture over it.
  5. Cover the dish with plastic wrap.
  6. Cook for 6 to 7 minutes on Medium-high or until the eggs are almost set.
  7. Stir once during cooking.
  8. Sprinkle cooked bacon and shredded Cheddar cheese over the eggs.
  9. Heat uncovered for 1 minute on Medium-high or until the cheese starts to melt.
  10. Let stand for 5 minutes. Cut into wedges and serve.
