Ingredients

  • 2 1/2 lb. to 3 lb. fryer chicken
  • 1 can undiluted cream of chicken soup
  • 1/2 tsp. black pepper
  • 1 c. buttermilk
  • 2 c. reserved chicken broth
  • 1 stick melted margarine
  • 1 c. self-rising flour
  • 1 tsp. salt

Instructions

  1. Cook the chicken until tender, then remove meat from bones and cut into small pieces.
  2. Reserve the broth from the cooked chicken.
  3. Combine the reserved broth and cream of chicken soup in a saucepan and bring to a boil.
  4. In a separate bowl, mix melted margarine, black pepper, salt, self-rising flour, and buttermilk until thoroughly combined to form a batter.
  5. Place the chopped chicken into a 13 x 9 x 2-inch baking pan.
  6. Pour the boiling broth and soup mixture over the chicken.
  7. Spoon the batter evenly over the top of the chicken and broth mixture.
  8. Bake at 425°F for 25 to 30 minutes until golden brown and bubbly.
