Ingredients

  • 1/3 cup oil
  • 1 pound raw fish fillets
  • 1 large onion, chopped
  • 1 bell pepper, chopped
  • 1/2 cup green onion, chopped
  • salt and pepper to taste
  • 1 can Ro-Tel tomatoes
  • 1 can tomato sauce

Instructions

  1. Brown the flour in oil in a large skillet or pot.
  2. Add chopped onion, bell pepper, and green onion; sauté until vegetables are tender.
  3. Add canned Ro-Tel tomatoes, tomato sauce, 2 cups of water, salt, and pepper; heat the mixture throughout.
  4. Add the fish cut into 2-inch squares to the sauce and stir only once to prevent breaking the fish.
  5. Serve the fish and sauce over cooked rice.
