Couscous Curry
Ingredients
- 1 12 tablespoons margarine, plus
- 1 12 teaspoons margarine ⓘ
- 3 cups chopped onions
- 8 large granny smith apples, cored and chopped ⓘ
- 2 ripe bananas, chopped ⓘ
- 5 garlic cloves, minced ⓘ
- 4 tablespoons curry paste ⓘ
- white wine ⓘ
- 1 teaspoon turmeric ⓘ
- 2 cups clear broth ⓘ
- 12 teaspoon salt ⓘ
- 34 teaspoon pepper ⓘ
Instructions
- brown couscous in 1/4cup oil, in another pan.melt 1 teaspoon margarine, over medium heat, and saute onion,after 10 minutes add remaining mrgarine,apple,garlic, and banana,stir often 5 minutes until tender, stir in curry and wine,cook 2 more minutes,add broth,salt and pepper.
- cook 2 to 3 minutes,stir in couscous,stir,fluf it up,let set 3 minutes,taste.
