Ingredients

  • 2 Tbsp. shortening
  • 1 lb. lean ground beef
  • 1 c. onion, chopped
  • 1 c. potatoes, diced
  • 1 c. cabbage, shredded
  • 1 c. carrots, sliced
  • 1/2 c. rice
  • 1 c. celery, sliced
  • 2 (1 lb. each) cans tomatoes
  • 4 c. water
  • 1/2 tsp. basil
  • 1/4 tsp. thyme
  • 1 bay leaf
  • salt to taste

Instructions

  1. Melt shortening in a large kettle.
  2. Add ground beef and chopped onion.
  3. Brown slowly, stirring with a fork to break up the meat.
  4. Add remaining ingredients: potatoes, cabbage, carrots, rice, celery, tomatoes, water, basil, thyme, bay leaf, and salt.
  5. Mix well.
  6. Bring to a boil.
  7. Cover and reduce heat.
  8. Simmer for 1 1/2 hours.
