Ingredients

  • 1 bunch green onions, finely chopped
  • 1 clove garlic, minced
  • 2 Tbsp. butter
  • 1/2 cup Chablis
  • 1 quart strained chicken stock
  • 1 can artichoke hearts, crushed by hand
  • 1 bay leaf
  • 1 tsp. nutmeg
  • 2 tsp. white pepper
  • salt

Instructions

  1. Saute green onions, garlic, and crushed artichoke hearts in white wine and melted butter.
  2. Add seasonings: bay leaf, nutmeg, white pepper, salt, and cayenne.
  3. Simmer for 5 minutes.
  4. Add strained chicken stock and remaining ingredients except the crabmeat, then simmer for 15 minutes.
  5. Thicken the soup with a mixture of 1/4 cup cornstarch dissolved in a little chicken stock, gradually adding until desired texture is achieved.
  6. Add lump crabmeat and gently stir for 5 minutes.
  7. Garnish with a thin lemon slice and a bit of paprika.

Tips & Substitutions

For a creamier bisque, consider adding a splash of heavy cream at the end of cooking. If you don't have Chablis, any dry white wine will work, or you can substitute with vegetable broth for a non-alcoholic version. Incorporating a pinch of cayenne can elevate the flavors, but adjust to your heat preference. Fresh crabmeat is ideal, but canned crabmeat can be used in a pinch.

Serving Suggestions

Serve this bisque hot, garnished with a thin lemon slice and a sprinkle of paprika for added color and flavor. It pairs beautifully with crusty bread or a light salad like Jo'S Spring Salad for a refreshing contrast. This dish can also be complemented with a crisp white wine or a light beer.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to three days. When reheating, do so gently over low heat on the stovetop to prevent curdling. If the bisque thickens too much upon cooling, add a splash of chicken stock to reach your desired consistency.
