Ingredients

  • 4 whole chicken breasts (boneless and skinless)
  • 2 (10 oz.) packages frozen broccoli or fresh broccoli, cut small
  • 2 cans cream of mushroom soup
  • 1 cup mayonnaise
  • 1 teaspoon lemon juice
  • 1/2 cup shredded sharp Cheddar cheese
  • 1/2 cup soft breadcrumbs

Instructions

  1. Arrange broccoli in the bottom of a 9 x 13-inch pan.
  2. Place the chicken breasts on top of the broccoli.
  3. Mix cream of mushroom soup, lemon juice, and mayonnaise to create a sauce, then pour over the chicken.
  4. Bake for 45 minutes at 350°F.
  5. Add shredded Cheddar cheese and soft breadcrumbs to the top.
  6. Bake an additional 15 minutes, or until the chicken is fork-tender and the topping is golden.
