Ingredients

  • 1 lb. crabmeat
  • 1/2 green pepper, minced fine
  • 1/2 small onion
  • 1 Tbsp. chopped parsley
  • 3 Tbsp. mayonnaise
  • 1 slice bread, fine
  • 1 tsp. flour
  • 5 Tbsp. milk
  • 2 well beaten eggs
  • 1 Tbsp. mustard
  • 1/2 tsp. seafood seasoning (optional)
  • salt and pepper

Instructions

  1. Simmer green pepper and onion in one tablespoon of butter until browned.
  2. Make a sauce by adding flour, milk, salt, pepper, and seafood seasoning if using.
  3. Put crabmeat in a bowl.
  4. Add beaten eggs, mayonnaise, mustard, parsley, and the prepared sauce.
  5. Mold into a loaf and place in a buttered loaf dish.
  6. Sprinkle with bread crumbs and dot with butter.
  7. Bake for 30 minutes in a 325°F (160°C) oven.
