Ingredients

  • 1 (9-inch) cooked pie shell
  • 1 (7 1/2 oz.) can crab meat, drained and squeezed dry
  • 1 cup grated cheese
  • 3 eggs, beaten
  • 1/8 teaspoon cayenne pepper
  • 1/8 teaspoon salt
  • 1/8 teaspoon nutmeg
  • 1 cup whipping cream or half and half
  • 2 tablespoons chopped pimento

Instructions

  1. Spread crab meat into the cooked pie shell.
  2. Add grated cheese over the crab.
  3. Mix eggs, cayenne pepper, salt, nutmeg, and cream in a small bowl; stir thoroughly.
  4. Pour the cream mixture over the crab and cheese in the pie shell.
  5. Dot the top with chopped pimento.
  6. Cook uncovered in the microwave for 8 to 10 minutes, turning twice, or until set.
  7. Let stand for 5 minutes before serving.
