Stuffed Flounder Filets

Ingredients

  • 1/2 cup onions, chopped
  • 1/2 cup butter
  • 1 egg, beaten
  • 4 tablespoons water
  • 1 tablespoon parsley, chopped
  • 2 teaspoons onion tops, chopped
  • 2 teaspoons bell pepper, chopped
  • 1 cup crab meat
  • 1 cup cooked shrimp
  • 4 to 6 flounder filets
  • paprika
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon lemon juice
  • 1/2 cup margarine
  • 1 teaspoon parsley flakes

Instructions

  1. Saute onions in butter until clear.
  2. Add parsley, onion tops, and bell peppers; cook until tender (about 2 to 3 minutes).
  3. Remove from heat and let cool.
  4. Add beaten egg and water; stir thoroughly.
  5. Add shrimp and crabmeat; toss gently.
  6. Add bread crumbs to reach dressing consistency.
  7. Spread stuffing on half of each flounder filet and fold over, fastening with toothpicks.
  8. Sprinkle paprika over each stuffed filet.
  9. Place in a greased baking pan.
  10. Bake in a preheated 375°F oven for 25 to 30 minutes, basting frequently with margarine, lemon juice, and parsley flakes.
