Ingredients

  • 6 medium potatoes, peeled and diced
  • 1/2 stick oleo (margarine)
  • 4 Tbsp. flour
  • 1 (13 oz.) can evaporated milk
  • 1 cup celery, cut in large slices
  • 1 large onion
  • salt to taste
  • pepper to taste
  • oyster crackers

Instructions

  1. Cover potatoes with water and some salt in a large pot and boil until tender.
  2. Drain off the water from the potatoes.
  3. Melt oleo (margarine) in a large pot over medium heat and add flour.
  4. Cook the flour mixture for about 5 minutes, ensuring it does not brown.
  5. Slowly add evaporated milk to the mixture, stirring constantly to prevent scorching.
  6. Add chopped onion, celery slices, salt, and pepper to the sauce.
  7. Let the sauce thicken, stirring constantly.
  8. Add the drained potatoes to the sauce and simmer for a while.
  9. Add more milk if needed to reach desired consistency.
  10. Serve the soup topped with oyster crackers or grated Cheddar cheese.
