  • 1/3 cup butter, softened
  • 1/2 cup cranberries or raisins
  • 1 cup chopped pecans or walnuts
  • 2 eggs
  • 1 cup mashed bananas
  • 1 tablespoon lemon juice
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder

Instructions

  2. Grease a 9 x 5-inch loaf pan.
  3. Beat sugar, softened butter, and eggs in a large bowl until smooth.
  4. Stir in mashed bananas and lemon juice.

  6. Stir dry ingredients into the creamed mixture. Fold in cranberries and chopped pecans or walnuts.
  7. Pour the batter into the prepared loaf pan.
