Ingredients

  • 4 medium apples, diced
  • 2 cups white sugar
  • 2 eggs
  • 1 cup corn oil
  • 2 1/2 cups flour
  • 1 teaspoon allspice
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 2 teaspoons soda
  • 1 cup raisins
  • 1 cup pecans

Instructions

  1. Cover the diced apples with sugar and let stand until liquid rises, stirring occasionally, until the sugar dissolves.
  2. Blend together the eggs and corn oil.
  3. Add the egg and oil mixture to the apple-sugar mixture and mix well.
  4. Sift together the flour, allspice, cinnamon, nutmeg, salt, and soda.
  5. Add raisins and pecans to the flour mixture.
  6. Gradually add the flour mixture to the apple mixture, stirring by hand to prevent crumbling.
  7. Pour the batter into a greased 9 x 13 x 2-inch pan.
  8. Bake at 350°F (175°C) for 50 to 55 minutes.
  9. After baking, poke holes in the cake and pour the sauce over the top.
